Chicken eggs are an important food in the human diet around
the world. Eggs contain a high level of protein, vitamins and minerals. Eggss
are an animal-based food source that appeals to people of all ages. Although
eggs have protective barriers, they can threaten public health, especially
through vertical and horizontal microbial contamination. Studies on the
microbiological characteristics of eggs reported that Escherichia coli is one of the most frequently isolated bacteria.
Pathogenic zoonotic serotypes of E. coli
are also found in the normal gut flora of chickens. These serotypes include
intestinal pathogenic E. coli (IPEC) and extraintestinal pathogenic E. coli (EXPEC), which cause severe symptoms in humans. This review covers
research on the importance of the presence of E. coli in hen eggs for veterinary public health.
